Bruscetta with mixed mushrooms, rocket and goats cheese

This is the perfect quick lunch for eating in the sunshine. You may not be in Italy but that shouldn't stop you bringing a touch of Italy into your kitchen and it is so simple to make. I gently fried a mixture of sliced mushrooms in garlic butter then lightly fried some rye bread to sit the mushrooms on. I then topped the whole lot off with rocket, pepper and crumbled goats cheese with a sprinkle of a balsamic vinegar dressing. Delicious served with a chilled white or rose wine.
