Quick and easy pasta recipe




Apologies if this image is a little blurred but I was in a hurry to eat it once made and the light was fading...
This is a combination pasta of some of my favourite ingredients - virgin olive oil, crushed garlic, baby courgettes and proscuitto, oh and some baby spinach...

Perfect for two you will need -

200g pasta
mushrooms
baby courgettes
garlic
half red onion
olive oil
parmesan
black pepper
proscuitto (two slices)
baby spinach

Chop and fry the garlic and onion in a healthy glug of olive oil. Tear up the proscuitto and fry alongside the other ingredients sliced. Cook pasta until al dente. Toss together and sprinkle with freshly grated parmesan cheese. Takes 15 minutes and is delicious...
