No excuses now - Pancake Day pancakes can be made in minutes and are one of life's little pleasures. Here is a recipe for the perfect pancake - and will make four golden, crisp and delicious pancakes to top at will... Of course we all prefer lemon and sugar in this household!
110g plain flour, 2 eggs, 200ml milk, 75ml, water, 50g butter.
Beat together the eggs, milk and water. Gradually add the flour until you have whisked up a smooth batter. Add a nob of butter to a frying pan then a ladel full of the batter. Tilt the pan to cover the bottom and fry until the bottom is golden. If you are feeling brave toss your pancake, if not flip it with a spatula. Fry second side. Serve with lemon and sugar or chocolate spread or whatever takes your fancy really.
